I changed majors in my sophomore year, so now I have a major and two minors.
I have some individual courses like microeconomics that aren’t related at all to my major (industrial technology). Could I exploit these “extra classes” if I’m looking for an entry level job somewhere?

Sure why not… when you get the job, just learn as you go.
