how hot do you want it, if you place a copper sheet in direct sunlight, it will get hot enough to give you a burn

The best way to collect solar heat on a copper sheet is to paint the side facing the sun with flat black paint. That way very little solar radiation will be reflected. Bear in mind that the panel can get to several hundred degrees or more hot so I would recommend using stove black or barbecue paint to blacken the copper sheet. If you sweat solder or braise copper tubing to the shiny side and allow water to circulate thru a tank by convection you’ll have a pretty efficient solar hot water heater! Check out the link below.

You could use parabolic mirrors to focus the energy onto the copper sheet, or you could use magnifying glasses or fresnel lenses to focus the light onto the copper sheet. Lenses could focus enough energy to get the copper really hot!
