ABSOLUTELY! There are many pilots that have degrees in fields completely unrelated to aviation, and there are many more who don’t even have college degrees. Yes, a college degree does mean a lot to the airlines, and a degree in aviation will give you a leg up in getting hired, and might make the training process easier for you. But it’s not a requirement. All airlines have basic minimum requirements in order to be hired as a pilot. These requirements include, but are not limited to, a commercial pilot certificate (license), appropriate ratings, a medical certificate, and a minimum number of flight hours. College degrees are often listed in the “preferred” column. However, I am not aware of any airlines that specifically require a degree in aviation for their pilots. In short, it should make little difference.
